The mapping feature allows you define which data should be transferred between Magento and Salesforce systems through the sync process.
It's Advanced mappings allow you to map fields between both platforms via a neat UI (in other words, you wont need a developer to customize the code every time you decide to add new attributes into the synchronization process. Each mapping allows you to control the system of record, whether it should be Salesforce or Magento giving you the flexibility to have very granular control over the data.
